Faculty – Heidi Schraft
Dr. Heidi Schraft is an associate professor in the Biology Department at Lakehead’s Thunder Bay campus. She also serves as the program coordinator for all Applied Life Sciences programs which are offered in Barrie, Orillia and Thunder Bay.
Dr. Schraft teaches Cell Biology, Food Safety, Food Microbiology and Molecular Genetics. Some of her courses are offered by videoconferencing.
Research interests are in Molecular Food Microbiology conducting interdisciplinary research to improve our basic understanding of the mechanisms involved in persistence or growth of bacteria in food and food production environments. The work concentrates primarily in three areas: 1) studies on biofilm formation by foodborne microorganisms; 2) adaptation of foodborne pathogens to growth at refrigerated temperatures; 3) molecular techniques for detection and ecological studies of bacteria.
